Slaughter yield and meat quality of chicken at different length of preslaughter feed withdrawal

چکیده
In the European Community, per-head consumption of chicken meat is steadily rising. Many consumers attempt eating more healthy products (BICKEL and WETSCHEREK, 2005) and that is why chicken meat with its low fat content is often preferred to beef or pig meat. Also events like the BSE-crisis or abuse of antibiotics in pig production, which are very present in the media, might lead the customers towards chicken meat. Nowadays quality is a major concern for most of the consumers, especially when buying foods. The most important factor in chicken meat quality is prevention from microbial contamination. Feed withdrawal before slaughter is a known procedure to lower the risk of contamination with faeces prior to slaughter, and the emptied intestinal tract also decreases the incidence of contamination of meat during dissection. Thus, feed withdrawal before slaughter in broiler production is a matter of recent research (e.g. SENGOR et al., 2006; KIM et al. 2007). Feed withdrawal prior to slaughter is also often caused by long transport times from the producer to the slaughterhouse. A further side effect of starving before slaughter is reducing the amount of waste material, which lowers disposal costs.

The effect of holding temperature on live shrink, processing yield, and breast meat quality of broiler chickens.
The effects of antemortem holding temperatures on live shrink, processing yields, and breast meat quality of broiler chickens were evaluated. A total of 462 broilers was reared to 45 d of age using conventional husbandry practices, removed from feed and water, and cooped 12 h prior to slaughter. During the 12-h feed withdrawal and holding time, the birds were held at 25, 29.5, or 34 C. Birds we...
متن کاملA Review: Influences of Pre-slaughter Stress on Poultry Meat Quality
Pre-slaughter conditions affect poultry meat quality. Therefore, stresses before slaughter like heat stress, struggle and shackling on the shackle line, crating and transport and feed withdrawal are very important for the poultry industry in respect of quality as well as welfare of the birds. However, exposure to heat in oxidative stress can in turn lead to cytotoxicity in meat type birds. Chic...
متن کاملFeeding turkeys a highly digestible supplement during preslaughter feed withdrawal.
Standard commercial practice is to deny poultry access to feed 8 to 12 h prior to slaughter. Occasionally a flock of turkeys is marketed at several ages, and starvation can occur for birds that are not shipped. For this project multiple marketed female turkeys were fed a special diet (nutritive supplement) during the preslaughter feed withdrawal period to reduce live weight loss, bird stress, a...
متن کاملEvaluation of a commercially available organic acid product on body weight loss, carcass yield, and meat quality during preslaughter feed withdrawal in broiler chickens: A poultry welfare and economic perspective1
The effect of a commercial organic acid (OA) product on BW loss (BWL) during feed withdrawal and transportation, carcass yield, and meat quality was evaluated in broiler chickens. Two experiments were conducted in Brazil. Commercial houses were paired as control groups receiving regular water and treated groups receiving OA in the water. Treated birds had a reduction in BWL of 37 g in experimen...
متن کاملEffects of Pre-slaughter Management on Carcass Weight and Meat Quality
Fasting pigs before slaughter has many advantages such as feed saving (2-3 kganimal), and increased food safety by reducing the risk of viscera rupture and pathogen contamination of carcasses during the evisceration process (Miller et al., 1997). Other potential advantages are an improvement in meat quality (Tarrant, 1989). Indeed, some studies have shown that fasting before slaughter improves ...
